Lemon & Herb Chicken

When cooking at home chicken is my go-to meat of choice. Sure, chicken breast with a little olive oil and seasoning is easy and tastes fine, but sometimes I like to mix up my marinade! This time I tried a lemon and herb combination that left my mouth wanting more.

What you need:

  1. 1 pound chicken breast
  2. 1 lemon
  3. Olive oil
  4. Water
  5. Red wine vinegar
  6. Parsley
  7. Basil
  8. Garlic
  9. Oregano
  10. Salt and pepper

How to make marinade:

  1. Juice from 1 lemon
  2. 2 tablespoons olive oil
  3. 2 tablespoons red wine vinegar
  4. 2 tablespoons water
  5. 2 tablespoons parsley
  6. 2 teaspoons minced garlic
  7. 2 teaspoons basil
  8. 1 teaspoon (each) salt and pepper
  9. 1 teaspoon oregano


Pour the marinade over the chicken and let it sit in the fridge for 2 to 3 hours before cooking. Once cooked, I served this chicken over a salad with cucumber, avocado, tomatoes and olives for a Mediterranean flare. If you want to make it a salad, just double the marinade and you have a homemade dressing. Be warned, the dressing will need to be shaken before using.
